Yum-o…! Chocolate Walnut Banana Bread looks like a loaf but tastes like a sweet muffin. I like to bake two mini loaves because one of the reasons I enjoy baking is the opportunity to share my treats. The other reason – I like to lick the bowl ;-) Enjoy!
1 cup (120g) flour
1 teaspoon baking soda
1/8 teaspoon salt
2 tablespoons (11g) cocoa powder
½ cup (8 tablespoons, 113g) butter, softened
½ cup (106g) brown sugar (light or dark)
1 large egg
1 teaspoon vanilla
2 medium bananas, mashed (~1 cup or 220g)
1/2 cup (113g) Greek yogurt
½ cup (85g) semisweet chocolate chips
¾ cup (85g) walnuts, chopped
Preheat oven to 350° Fahrenheit.
Lightly grease or line loaf pans; either two mini loaf pans or one 9" x 5" loaf pan.
In a medium bowl, whisk the flour, baking soda, salt and cocoa powder.
In a large bowl, beat the butter and sugar until lighter in color and creamy.
Beat in the egg.
Stir in the vanilla, banana and Greek yogurt.
In small increments, add the dry ingredients. Stir gently after each addition until all of the dry ingredients are added to the wet.
Fold in the chocolate chips and walnuts.
Spread the batter in the prepared pan(s).
For two mini loaves, bake for around 45 minutes. For a single loaf, bake for around 60 minutes. A wooden toothpick inserted in the center will come out clean.
Cool completely on a wire rack.
